After the Scallops are Shucked (cut from shell) we rinse with salt water to remove and sand or shell. We weigh the scallops basically like a giant 50 lb measuring cup (5 gallon bucket with holes that drain any salt water) It’s poured into a cheesecloth bag and put on ice until we offload.
